梗米其味甘淡,其性平和,具有益五脏,壮气力,长肌肉之功。《随息居饮食谱》称用于“病人、产妇,或身体虚弱者”,方法是"梗米煮饭,当米料烂熟而尚未烘干前,取其面上的浓米汤饮之”,“贫人患虚证,以浓米饮代参汤”,均能起到补养作用。
糯米:粘柔,味甘性温,有补中益气之功。李时珍的《本草纲目》中,一用糯米治自汗不止,方法是糯米、小麦麸同炒为末,每服 9g,米饮汤下。二治胎动不安,用糯米30g ,黄芪、川芎各15g ,水200ml ,煎服。三治虚劳不足,用糯米入猪肚内蒸干,捣作丸子,日日服之。此外,还有几个食疗方剂可供参考:脾虚泄泻,用糯米、莲子、大枣、淮山药共煮粥,熟后加白糖食之;颈淋巴结核,用糯米1份,米2份,分别炒黄共研末,每日早晨空腹开水冲服 9g。
小麦:甘凉,具有养心安神,厚肠益脾之功。在医圣张仲景的《金匮要略》中就有一首著名的甘麦大枣汤,治疗因情志抑郁或思虑过度,心脾受损,致脏阴不足而致神志不安,悲伤欲哭,呵欠不断,具有良好效果。方法是用小麦 50g ,甘草10g ,大枣10枚,水煎分3次服。唐代名医孙思邈认为小麦“养心气,心病者宜食”。
大麦:甘咸性凉,有和胃宽肠之功。噎膈,即食管癌等所致吞咽困难,可用大麦面作稀糊饮用,因其性滑腻,易下咽,能助胃气,恢复体力。轻度的皮肤烧伤、烫伤,可用大麦炒黑,研末,油调搽患处。
荞麦:味甘性凉,能降气宽肠,消积开胃,用于肠胃积滞,慢性泄泻,噤口痢,水火烫伤等。李时珍在壮年之时,患肚腹微微作痛,出即泻,泻亦不多,一昼夜好多次,消瘦疲乏2个月,用消食化气药俱无效,有个僧人让他用养麦面作饭,连食三四次即愈。所以他在《本草纲目》中说:"养麦最降气宽肠,故能练肠胃滓滞,而治浊带泄痢腹痛上气之疾,气盛有湿热者宜之。”
粟米:即小米,味甘、咸,性凉,有补虚损、健脾胃之功,小儿脾虚泄泻、消化不良,用粟米、淮山药共研细未,煮糊加白糖适量喂之。产后体虚,用粟米、大枣煮粥,加红糖食用。
玉蜀黍:即玉米,味甘性平,能调中开胃,利尿除浊,常用于尿路结石、慢性肾炎水肿或高血压病的辅助治疗。
